Abstract
El Síndrome Autista es un trastorno resistente a los tratamientos psico- educativos y biológicos. La adopción de dietas exentas en gluten, caseína, soja y azúcar parecen representar una alternativa tranquilizadora para estos niños además de contribuir a minimizar sus problemas malabsortivos; sin embargo, el efecto positivo de este tipo de dietas suele ser obviado e incluso ignorado por los padres. Objetivo: Proponer un recetario libre de gluten, caseína, soja y azúcar adaptado a los conocimientos de padres y docentes de niños con autismo pertenecientes a dos centros de educación especial del estado Mérida-Venezuela. Material y métodos: Investigación descriptiva-transversal. Se aplicó un formulario de recolección de datos en dos oportunidades (pretest y post test) contentivo de las variables objeto de interés. El análisis estadístico se hizo mediante frecuencias, tablas de contingencia y estadísticos descriptivos. Resultados: Se estudio la población total de padres y representantes (26 individuos). Hubo cambios en el porcentaje de padres y docentes que desconocían el autismo tras la intervención (recetario): padres (38%Vs.54%) docentes (27%Vs.42%). Antes del recetario los docentes poseían mayores conocimientos sobre la alimentación del niño con autismo que los padres (23%Vs.19%), luego de la intervención se equiparó. Tras la presentación del recetario la alimentación se tornó en un aspecto muy importante para las personas estudiadas (50% y 42%).

The adoption of diets free of gluten, casein, soy and sugar seems to represent a reassuring alternative for children, also, helps to mitigate their malabsorptive problems. However, the positive effect of the diet in this kind of children is under valorizing by parents. Objective: To propose a gluten, casein, soy, and sugar free recipe book adapted to the knowledge of parents and teachers of children with autism belonging to two special education centers in the state of Merida-Venezuela. Material and methods: Descriptive, transversal-analytical research. A census was conducted in 26 parents and teachers. Was designed a data collection form containing the variables of interest, consisting of items of open and closed type. This was applied twice (pre-test and posttest). For the analysis of the information were used: frequencies, contingency tables, and descriptive statistics. Results: there were changes in the percentage of parents and teachers who did not know about autism after the intervention: parents (38% Vs.54%) teachers (27% Vs.42%). Before the cookbook the teachers had more knowledge of the feeding of the child with autism than the parents (23% Vs.19%), after the intervention was equated. After the presentation of the recipe, the diet free of gluten and casein is very important for most (50% and 42%). |
