Este trabajo compara el efecto del amamantamiento restringido y la cría artificial sobre la concentración de grasa en leche en vacas Holstein Friesian
cruzadas con animales criollos. La zona de estudio está localizada en el Valle de Cuche, municipio de Santa Rosa de Viterbo, 2.800 msnm, 72°, 56’ de
longitud de GMT (Boyacá-Colombia), con una temperatura promedio anual de 13 °C. Esta investigación se realizó con una muestra experimental de 20 vacas
primíparas y 20 vacas multíparas con un 75 y 87,5% de pureza Holstein Friesian (cruzadas con ganado criollo), las cuales fueron agrupadas de igual manera de
acuerdo al número de lactancias; se dividió la población de estudio en dos unidades experimentales (cada una con 10 animales) , en las cuales en una unidad
se realizó ordeño mecánico y amamantamiento de las crías (AR) y en el otro ordeño mecánico sin amamantamiento de las crías (CA); el amamantamiento se
efectuó del día 4 al 84 de edad para ambos sistemas. El experimento se realizó de enero a octubre del 2008, comenzando el día 4 posparto, hasta el final de
la lactancia. Al considerar el sistema de crianza se encontró que las vacas del grupo con AR tienen promedios altamente significativos (P<0,01) en el
porcentaje de grasa de la leche que las otras vacas bajo el sistema de CA (+6,29%). Se encontró que vacas de primer parto (+6,29%) tienen diferencias
significativamente altas (P<0,001) comparadas con el porcentaje de grasa en vacas de dos o más partos. Los menores porcentajes de grasa fueron encontrados
en la primera porción de leche ordeñada y los más altos porcentajes de grasa se observaron en la leche residual con diferencias altamente significativas
(P<0,001). Una diferencia significativa del contenido de grasa se observó dependiendo de la fase de lactación: altos contenidos de grasa durante las
primeras semanas de lactancia, bajos contenidos de grasa durante el pico de lactancia en la curva y se incrementan los niveles alrededor del final de la
lactancia.

Resumen en otro Idioma | This work seeks to compare the effect of the controlled – suckling and the artificial bedding in the concentration of fat in milk in Holstein Friesan crossed – breed with native animals. The study area is located on the Cuche Valley, in the Municipality of Santa Rosa de Viterbo, 2800 meters high above the sea level, and a Longitude of 72° 56’ (Boyacá – Colombia) with a year average temperature of 13 °C. This research work was carried out with an experimental sample of 20 first -birth cows and 20 other cows with two or more births, with a breed purity of 75 and 87,5% Hosltein Friesian crossed – breed with native cattle, which were grouped in the same way according to the number of lactations. The study population was divided into two experimental units (10 animals per unit) from which in one unit, mechanical milking was used as well as suckling breast – feeding (AR); in the other unit, mechanical milking without suckling breast – feeding (CA). The breast – feeding was carried out from day 4 through day 84 of age for both systems. The experiment was carried out from January through October of 2008 beginning on day 4 post - birth until the end of lactation. Considering the mothering system, it was found that the cows of the group with AR had more significant averages (P<0.01) in the percentage of milk fat than the other cows under the system of (CA + 6.29%). It was also found that the first - birth cows had significantly higher differences (P<0.001) in comparison to the percentage of fat in multi – birth cows. The smallest percentages of fat were found in the first milking whereas the highest percentages of fat were observed in the residual milk, which had highly significant differences (P<0.001). A clear difference in the content of fat was observed depending on the lactation phase as follows: high contents of fat during the first weeks of lactation, fat low contents of fat during the peak of lactation phase curve, and the fat levels were increased around the end of the lactation. |
