Considerando la importancia de los atributos intrínsecos en la decisión de compra de la carne bovina, se evaluó la importancia relativa del color,
contenido de grasa en el corte, frescura y precio para consumidores de Temuco, y la existencia de diferentes segmentos de mercado, mediante una encuesta a
400 personas. Utilizando análisis conjunto se determinó que el color, contenido de grasa y frescura fueron más importantes que el precio en la muestra
total, con preferencia hacia carne de color rojo claro, con menor contenido de grasa y muy fresca, al menor precio. Mediante análisis de conglomerados
jerárquicos se diferenciaron tres segmentos, el mayoritario (55,5%) dio la mayor importancia al color, contenido de grasa y frescura. El segundo grupo
(26,0%) asignó mayor relevancia al precio y prefirió carne con mayor contenido de grasa. El grupo minoritario (18,5%) otorgó alta importancia al color,
contenido de grasa en el corte y frescura, pero prefirió pagar el mayor precio. Los segmentos se diferenciaron según el gasto mensual
en alimentos y en carne, problemas de la carne cuando ésta no cumple con las expectativas previo a la compra y según el origen étnico de la persona. Los
resultados reflejan preocupación de los consumidores por el cuidado de la salud y la inocuidad de la carne, pero desconocimiento de los factores postmortem
que mejoran su calidad.

Resumen en otro Idioma | Considering the importance of intrinsic attributes in the purchase decision for beef, the relative importance of colour, fat content in the cut, freshness and price for consumers in Temuco was evaluated, with the existence of different market segments, through a survey of 400 individuals. It was determined by conjoint analysis that colour, fat content and freshness were more important than price in the total sample, with a preference for meat of a bright red colour, with lower fat content and very fresh, at the lowest price. Three segments were distinguished by analysis of hierarchical conglomerates. The majority segment (55.5%) attributed the greatest importance to the colour, fat content and freshness. The second group (26.0%) assigned greater importance to the price and preferred meat with a higher fat content. The minority group (18.5%) gave great importance to the colour, fat content in the cut and freshness, but preferred to pay a higher price. The segments were distinguished by monthly spending on food and meat, problems with meat when it does not meet pre-purchase expectations and by the ethnic origin of the person. Results reflect concern of consumers to take care of their health and ensure that meat is harmless, and an ignorance of post-mortem factors which improve the quality. |
