dc.description.abstract | El propósito de esta investigación fue agregar transglutaminasa en la elaboración de productos cárnicos reestructurados crudos y medir su eficiencia en términos de mínima concentración y tiempos de reacción necesarios para lograr productos estables a temperatura de refrigeración. Carnes de ave y bovino fueron utilizadas en el ensayo para elaborar 2kg de cada uno de los productos a los cuales se les agregó por separado transglutaminasa, a concentraciones de 0.25; 0.5; 0.75 y 1%. Se dividieron en 4 porciones de 0.5 kg y se colocaron a 4º C durante los siguientes tiempos de reacción: 4; 8; 12 y 24 h. El experimento se repitió 7 veces. La eficiencia de la enzima se midió en función de la estabilidad que presentó el producto al ser rebanado a temperatura de refrigeración. Para ello se elaboró una escala donde se asignó un porcentaje de cohesión en función del número de grietas observadas en el producto al ser rebanado. Los resultados indicaron que al aumentar la concentración de la transglutaminasa aumentó (P < 0.05) la cohesión de las carnes y en consecuencia la estabilidad del producto final crudo. El mismo efecto se conservo al aumentar el tiempo de reacción. La enzima resultó ser más eficiente con la carne de bovino que con la de ave. En conclusión, la adición de transglutaminasa es una alternativa para obtener productos reestructurados crudos que pueden ser ofrecidos a temperatura de refrigeración. | es_VE |

dc.description.abstract1 | The purpose of this research was to determine the efficiency of the transglutaminase in terms of concentrations and reaction time needed to obtain stable raw restructured products at refrigeration temperature. Bovine and poultry meat were used in the experiment to produce 2kg of each restructure product. Transglutaminase was added at 0.25; 0.5; 0.75 and 1% concentrations. Each restructure product was divided in 4 portions of 0.5 kg and placed in refrigeration at the following reaction: 4; 8; 12 and 24 h. The experiment was repeated 7 times. The efficiency of the enzyme was determined as a function of the stability (cohesiveness) shown by the products when they were sliced at refrigeration temperature. Results indicated that as the enzyme concentration and reaction time increased, stability of the final products increased (P < 0.05). It also indicated that at same enzyme concentrations and reaction time restructured products formulated with bovine meat were more stable than those formulated with poultry meat. As a conclusion, addition of transglutaminase is an alternative to obtain raw restructured products stored at refrigeration temperature. | es_VE |
